Oatmeal Raisin Bars

Ingredients

  • 1.5 coat flour
  • 1 c rolled oats
  • 3 flax eggs (3 tbsp flax seed meal mixed with 1/2 c water and set aside for 5 minutes)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 c unsweetened plant milk
  • 10-12 medjool dates (your preference)
  • 1 tsp vanilla
  • 1/2 c sugar free, oil free almond butter
  • 1.5 c raisins
  • Instructions

    1. Preheat oven to 350.

    2. Make flax eggs and set aside.

    3. Mix oat flour, oats, cinnamon, and baking soda in a large mixing bowl until well-combined.

    4. Blend plant milk, vanilla, and dates in a high speed blender until smooth.

    5. Add blended mixture to the dry ingredients in mixing bowl along with almond butter and raisins and combine well.

    6. Transfer mixture onto parchment paper-lined baking sheet and press until flat, about 1/2” thick.

    7. Bake for 15 minutes. Allow to cool and cut into bars.
